Sold whole by the piece and charged on its actual weight: each one weighs 5 kg to 6 kg. The price shown is for an average 5.5 kg piece.
What it is. The whole striploin (faux-filet) from Australian Black Angus, graded MB3+ for marbling. It is sold whole, by the piece and frozen, so you can cut steaks to the thickness you like.
Taste and texture. Firmer than ribeye (entrecôte), with a strip of fat along one side and a strong beef flavor. Tender when cooked medium-rare.
How to cut and cook it. Thaw the whole piece in the fridge; a piece this size needs about 2–3 days. Trim the hard outer fat, leaving a thin layer, then cut steaks about 3 cm thick. Grill over hot coals until the center reads 52 °C for medium-rare, rest 5 minutes and slice against the grain. You can also roast the whole piece and carve it for a crowd.
Pack and storage. Arrives frozen and vacuum-sealed. Keep it at −18 °C and follow the supplier use-by date on the pack. Thaw in the fridge, never on the counter. Once thawed, cook it within a day.
Where it comes from. Australian Black Angus, checked by our butchers before it ships, and packed the day it ships.

Bring to room temperature 30 minutes before cooking. Sear in a screaming-hot pan, then rest 5–10 minutes and slice against the grain.
Steak doneness is a preference. USDA: whole beef/lamb 63 °C before removal + 3 min rest. For children, pregnant people, older adults and anyone with a weakened immune system: cook steak to at least 63 °C and check with a thermometer. Mince, burgers, kafta and meat sausages: 71 °C. Poultry: 74 °C.
We don’t make them. We enforce them.
Rest your meat. Yes, even when you’re starving. Especially then.
Salt early, salt often. Timid seasoning is a quiet cry for help.
Ketchup on a dry-aged ribeye is your legal right. We’ll be over here, weeping softly.
Medium-well is a phase. We believe in you.
The first slice belongs to the cook. That’s physics, not favouritism.
If the grill isn’t smoking, neither is your reputation.
Charcoal, then patience. The rush is the only thing that ruins a barbecue.
Room temperature before the pan. Cold steak is a cry for help.
Pat it dry. Water is the sworn enemy of a good crust.
One flip. You’re searing a steak, not fluffing a pillow.
Season the board too — the resting juices are free sauce.
Buy the good cut once. Regret the cheap one twice.
A sharp knife is a safe knife. Dull ones do the damage.
Let it rest longer than you think. Patience tastes better.
